Ingredients

  • 2 cups TVP (textured vegetable protein)
  • 1 cup hot vegetable broth
  • 1/2 cup finely minced mushrooms
  • 3 tbsp coconut oil, chilled and chopped into tiny pieces
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 2 tbsp nutritional yeast
  • 1 tsp MSG (optional but useful for deeper umami)
  • 2 tbsp potato starch
  • Salt and black pepper to taste

Method

  1. Hydrate the TVP with the hot vegetable broth for about 5 minutes.
  2. Add mushrooms, soy sauce, tomato paste, nutritional yeast, MSG (if using), potato starch, salt, and pepper.
  3. Mix until fully combined and evenly seasoned.
  4. Fold in the cold coconut oil chunks last so they stay solid before cooking.
  5. Form 6 burger patties and chill for 30-60 minutes to help them hold shape.
  6. Heat a skillet over medium-high heat with a little oil.
  7. Cook each patty 3-5 minutes per side until browned and firm.

Optional Level-Up

  • Add a little beet powder for meaty red color.
  • Add smoked paprika for grilled flavor.
  • Add a tiny splash of vinegar for extra tang.
